STICKY DATE MUFFINS

Ingredients
1? cups chopped dates, 1 ? cups SR flour,60g butter
? cup brown sugar, Vanilla
2 cups water and 1 teaspoon soda added
2 eggs
? cup white sugar
Sauce
1 cup brown sugar, 60g soft butter
? cup cream
1 teaspoon Vanilla
Method
Heat dates, water & soda in a saucepan until thick. Place in bowl to cool, add butter, beaten eggs, both sugars, flour & vanilla. Mix together thoroughly but don't overbeat. Place spoonfuls in greased muffin trays & cook in moderate oven@ 180 degrees centigrade for approximately 25-30 minutes.
Sauce - melt all ingredients together in a saucepan & simmer 4- 5 minutes. Serve muffins with a cuppa or serve with sauce & custard or ice-cream for dessert - DELICIOUS!
